Persian Immersion

I am most excited to offer an exotic class on Iranian food, hurrah! Think Sherezade, 1001 Arabian nights, gorgeous and sexy dishes fragrant with sweet and sour flavors to delight your friends.

Two main chicken dishes will be the highlight:

Shirin Pollow, a saffron rice jeweled with almonds, pistchio, orange peel and barberries. Traditionally served at weddings, this is a wonderful, celebratory dish. Let's prepare this so that the Tadig, the crispy layer of rice on the bottom, is flipped to the top.

Khoresht-e-fesenjan is another of my favorites. This is chicken slow-cooked in a walnut and pommegranite sauce. Ah, delight!

How to create a multitude of flowers, basketweave and piping techniques to make a cake that will stop them in their tracks. These series comes with a recipe book and decorating kits, as well as a take-home cake to enjoy.

Oh yes, it is cold outside! Learn how to make healthy, gorgeous and oh-so satisfying soup for your soul. This is one of my most intense knife-skills classes, where we really get chopping!

A Hipcooks Bridal Shower class and party This is a private class, invitees only, for a Bridal Shower party. You bring the mimosas, I teach the crepes! We set up crepe-making stations with all the fixins' for delicious sweet and savory crepes. There is time in this session to open presents and socialize, as well as cook to your heart (and belly's) content! Please email me for more info on this fun and delightful class

We are making a commitment to you, by getting to know you in class, and building on what you bring to the session. In turn we hope to get a commitment from you for a healthier you – so we ask that you sign up for the entire series. (If you cannot, we understand and will make accommodations for you to join session by session) The cost per session will be $130 per person for the 5 hour session. That will include materials, ingredients, food to eat, beverages and handouts. There is nothing to bring but a pen for note-taking. Wear comfy clothes and shoes. Aprons will be provided. To sweeten the pot, if you would like to take the whole 4-course series, we are offering a reduced price of $ 450 for the whole series (a $70 savings). The series will meet once a month over 4 consecutive months in April, May, June and July. We are scheduling the series from 10am to 3pm on Saturdays beginning in April. If there is enough interest, we will open up Sunday from 10am to 3pm as well. We will also potentially open new dates throughout each month. Class sizes will be small, with 12 people in each class.

Wheat Free, Dairy-free, Gluten Free! Lucky you….you have a jumpstart into a very happy and healthy life by eliminating (or even just restricting) these common allergens. This class will be tailored to those with wheat, gluten and dairy sensitivities or those who suspect they might have sensitivities. What are the causes of food sensitivities, physical symptoms of food sensitivities, how to test for food sensitivities. What the difference is between wheat-free and gluten free and how to decipher labels. What are dairy substitutes that are not freaky? This class will have a HUGE cooking portion with Monika, and will include LOTS of items as well as entire dinner party menus that are “Free!”, yet non-“Free!” people will not notice.

Spring into Life! #3: Healing, cleansing, juicing and raw

Congratulations! You are halfway there to a happier, healthier you! Now, how to hone in. This series will talk about how to cook for healing when one is not well. What foods give the most energy the fastest, and what is good for specific ailments. Since at this point we’ll know you (and each other) better, we can tailor this portion to you. Also, we will discuss cleansing: when to do it, when not do it, and how to do it gently.

Juicing is a wonderful way to have good health in a glass – at any point in your life. Well discuss how, when, and why to juice. Of course, we’ll be sipping throughout class.

And hey, it is summer! What a great time to try RAW! A huge portion of the class will be devoted to instruction on RAW. Of course there are people who are all raw all the time, but I would like for this class to be more focused on an introduction to raw as an option amongst the myriad of other options. In summertime, going raw is easy…whether it be for a meal or for a day, or for 3 days if you’d like to try. In this class, we’ll teach many fun courses that are entirely raw, as well as a raw dinner party you can have for your friends.

Spring into Life! #4: The Healthy Sweet Tooth

How can you sweeten desserts naturally? Can you not use any gluten or dairy and still get a delicious cake? And I mean delicious, people, not some weird “Oh I am eating a “healthy cake” cake. Oh, do you have OPTIONS!

In this class we’ll give an overview of the history of sugar, its effects on the body, how to identify refined sugar in food labels, physical complications from too much refined sugar, how to overcome sugar addiction.

Also, what’s the deal with chocolate? Once again, you are in luck! We’ll talk about the health benefits of cacao (Food of the Gods) and how to identify high-quality dark chocolate.
